[SimplifyMe] Fruity Easter {Ham}

 

FRUITY EASTER HAM
MAKES 15 SERVINGS.

7 pound spiral sliced cooked bone in ham
1 1/2 cups apricot preserves
1/2 cup water
Pepper
3 cups chicken broth
1/3 cup Dijon mustard
3 tbs cornstarch
Salt
1 1/2 cups crushed gingersnap cookies
1/2 cup brown sugar

LINE a roasting pan with foil. Place ham on a rack in pan. Cover, bake at 325 degrees for 1 1/2 hours. Combine preserves, brown sugar and mustard, reserving 1/4 cup of mixture for sauce. Spread over ham. Press cookie crumbs onto ham. Bake covered 45 min. longer or until done. REMOVE meat to a platter, keep warm, reserving 1/3 cup drippings. Combine broth, salt, pepper reserved ham drippings and reserved apricot mixture in a saucepan. Combine cornstarch and water until smooth. Stir into saucepan. Bring to a boil, cook until thickened.
