MACARONI WITH GREENS
MAKES 4 SERVINGS.
1 bunch Swiss chard, stems removed, leaves torn into pieces
1 onion, chopped
12 oz rigatoni pasta
4 oz Muenster cheese, grated
1 1/4 cups milk
1 tbs oil
4 oz sharp Cheddar cheese, grated
2 tbs flour
Salt and Pepper
COOK pasta according to package directions, adding chard during last 3 min. of cooking. Drain pasta and chard, return to pot. Heat oil in a skillet. Add onion, season with salt and pepper, cook covered until tender. Sprinkle flour over onions, cook 2 min. whisk in milk. COOK until slightly thickened. Add Cheddar and 1/2 cup Muenster cheese, cook until melted. Add pasta and chard, toss. Heat broiler. Transfer mixture to a baking dish. Sprinkle with remaining Muenster, broil until golden brown, then SERVE...
