Cook 1 pound rigatoni pasta until al dente. Drain, reserving 1 cup cooking water. In same pot, cook 8 oz bacon, thinly sliced, until crisp, transfer to paper towels. Add 10 sage leaves to hot bacon fat, cook until crisp. Transfer to plate. Add 2 shallots, minced, and 1 tart apple, sliced, cook 5 min. Add pasta, 3 cups roasted squash, chopped, cooking water, bacon and 1/2 cup grated Parmesan cheese, season with salt and pepper, toss. Place 4 pocketless pitas in stack in 350° oven to warm. In bowl, combine 3 cups pulled chicken, 1 cup roasted peppers, chopped, 1 large tomato, seeded, diced, 1 cucumber, peeled, seeded, diced, 1/4 cup minced red onion, 2 tbs olive oil, 1 tbs red wine vinegar and 1/2 tsp each salt and pepper.
