STRAWBERRY PECAN BREAD
MAKES 8 SLICES.
Heat oven to 350 degrees. Line a loaf pan with parchment, leaving an overhang, coat with cooking spray. MAKE BATTER---Whisk 1/2 cup oil, 1/4 cup milk, 2 eggs, and 1 tsp vanilla. Separately, whisk 1 1/2 cups flour, 3/4 cup sugar, 1/2 cup chopped toasted pecans, 1 tsp each baking powder and cinnamon, 1/2 tsp salt and 1/4 tsp nutmeg. Add 1 cup chopped strawberries tossed with 1 tbs flour to batter. Fold wet ingredients into dry ingredients. Bake 70 min. or until done. Let cool 1 hour, then remove loaf from pan. SERVE & ENJOY...
