SLAW BEAN TACOS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 bacon slice
1 cup sliced onion
2 tsp minced garlic
1/2 jalapeno pepper, seeded, chopped
15 oz can seasoned black beans, drained
3/4 tsp cumin
1 tbs red wine vinegar
1 tbs mayonnaise
2 cups coleslaw
2 green onions, sliced
8 corn tortillas
1 oz cheddar cheese, shredded
Cook bacon in a skillet until crisp. Remove bacon from pan, crumble. Add onion, garlic, and jalapeno to drippings in pan, cook until onion is tender. Place onion mixture in a bowl. Mash 1 cup beans. Add beans, cumin, salt and remaining beans to pan, cook until heated. Stir in bacon. COMBINE vinegar, mayo, and pepper in a bowl. Add coleslaw and green onions, toss. Heat tortillas. Divide bean mixture among tortillas. Top with onion mixture and coleslaw mixture. Sprinkle with cheese. SERVE & ENJOY...
