CREAMY MUSHROOM PASTA
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
9 oz pkg fettuccine pasta
1 tbs oil
1/2 cup chopped onion
12 oz mushrooms, sliced
2 garlic cloves, minced
1/4 cup white wine
1 tsp chopped thyme
1/2 cup half and half
1 oz Parmesan cheese, grated
1/4 cup chopped parsley
Cook pasta, omitting salt and fat. Drain. Heat a skillet. Add oil. Add onion, mushrooms, garlic, salt and pepper, saute until mushrooms are browned. ADD wine and thyme, cook until liquid evaporates. Remove pan from heat. Add pasta, salt, half and half, and cheese to pan, toss. Sprinkle with parsley. SERVE & ENJOY...
