BERRY PEACH MUFFINS
MAKES 12 SERVINGS.
2 cups flour
1/2 cup brown sugar
2 tbs chia seeds
2 tsp baking powder
1 egg, beaten
1/2 cup peach nectar
5 tbs melted, plus 1 tbs salted butter
1 cup raspberries
1 cup diced peaches
1 1/2 tbs minced candied ginger
1/2 cup sliced almonds
Mix first 4 ingredients, reserve 1/2 cup. Stir egg, nectar, and 5 tbs butter into remaining flour mixture. Add fruit and ginger. Spoon batter into lined 12 well muffin pan. Stir almonds and remaining butter into reserved flour mixture to create crumbs, sprinkle over muffins. Bake at 375 degrees for 15 min. or until done. SERVE warm & ENJOY...
