EGG PEPPER PITAS
MAKES 2 SERVINGS.
7" pita, halved, pocket opened
1 tbs oil
1 green bell pepper, seeded, sliced
1 tbs seeded minced jalapeno
4 eggs, beaten
Salt and Pepper
1/4 cup chopped chives
1/2 avocado, sliced
1/4 cup salsa
Heat oven to 300 degrees. Wrap pita in foil, place in oven to warm. Warm oil in a skillet. Add bell pepper and jalapeno, cook until tender. Season eggs with salt and pepper. Add eggs to skillet, cook until eggs are scrambled. Remove skillet from heat, stir in chives. Remove pita from oven, unwrap, spoon egg mixture into pockets, top with avocado and salsa. SERVE & ENJOY...
