QUICK CHICKEN LETTUCE WRAPS
MAKES 4 SERVINGS.
2 tbs soy sauce
1 tbs sherry or broth
1 tbs hoisin sauce
1 tsp rice vinegar
1 tbs dark sesame oil
1 tbs minced garlic
1 tbs minced peeled ginger
14 oz pkg coleslaw
6 oz shredded skinless boneless cooked chicken breast
1/2 cup sliced green onions
12 lettuce leaves
1/4 cup chopped cashews
Combine first 4 ingredients in a bowl. Heat a skillet. Add oil to pan. Add garlic and ginger to pan, saute 30 seconds. Add soy sauce mixture and coleslaw, cook 1 min. Add chicken and 1/4 cup onions to pan, cook until coleslaw begins to wilt. Divide chicken mixture among lettuce leaves, sprinkle with remaining onions and cashews. SERVE & ENJOY...
