HERB PARSNIP MASHED-POTATOES
MAKES 2 SERVINGS.
2 potatoes, peeled, cut into pieces
2 parsnips, peeled, cut into pieces
Salt and Pepper
1/2 lemon
1/2 cup milk
4 sprigs thyme
1 clove garlic, smashed
1 tbs unsalted butter
Place potatoes and parsnips in a pan, add water to cover, bring to a boil. Add 1 tsp salt, simmer until tender. Remove 4 strips of lemon zest, place in a pan. Add milk, thyme, garlic and butter, bring mixture to a boil. *Simmer 2 min. remove from heat. Drain vegetables, return to pot. Strain milk mixture into pot with vegetables, mash to desired consistency. Squeeze in 2 tbs lemon juice, season with 1/2 tsp each salt and pepper, mix. SERVE & ENJOY...
