GARLIC ROASTED CHICKEN---with sauce and herbs.
MAKES 6 SERVINGS.
2 tbs olive oil
2 tbs mixed chopped herbs
1 tbs chicken seasoning
2 tsp salt
1 tsp pepper
5 pound roaster chicken
1/2 cup peeled garlic cloves
1 onion, peeled, sliced
3 cups chicken broth
1/2 cup white wine
Heat oven to 350 degrees. In bowl, combine first 5 ingredients. Place chicken on rack in roasting pan. Rub chicken with oil mixture. Place garlic cloves, onions and 1 1/2 cups broth in bottom of pan. *Roast 1 1/2 hours or until done. Transfer chicken to platter, let sit 10 min. Skim and discard fat from pan juices. Place pan over 2 burners on stovetop. Add wine and remaining broth, bring to a boil. Mash garlic and onion into sauce. Let simmer 5 min. Season with salt and pepper. SERVE sauce with chicken & ENJOY...
