SHRIMP SAUSAGE GRITS
MAKES 5 SERVINGS.
3 cups water
1 cup quick cooking grits
4 oz cream cheese, cubed
3 fully cooked spicy chicken sausage links, cut into slices
2 tsp canola oil
2 garlic cloves, minced
2 green onions, chopped
4 tsp flour
1 1/2 cups chicken broth
1/4 cup evaporated milk
1 pound shrimp, peeled, deveined
1 tomato, chopped
In a pan, bring water to a boil, stir in grits, cook until thickened. Stir in cream cheese. In a skillet, brown sausage in 1 tsp oil. Remove, keep warm. In same pan, heat remaining oil. Add garlic and half of the green onions, cook 1 min. STIR in flour until blended. Whisk in broth and milk. Bring to a boil, cook until thickened. Stir in shrimp and sausage, cook until shrimp turn pink. SERVE with grits, top with tomato and remaining green onion...
