VEGGIE HERB SALAD
MAKES 6 SERVINGS.
2 cucumbers, sliced
8 oz snow peas, sliced into strips
1 cup sliced onion
1/3 cup dill, chopped
1/2 cup sour cream
2 tbs red wine vinegar
1 tbs sugar
In a bowl, toss together cucumbers, peas, onion, 1/3 cup dill and salt to taste. In a separate bowl, mix sour cream, vinegar, sugar, pepper and salt to taste until smooth. Pour over vegetables, mix well. Refrigerate 1 hour. Garnish with remaining dill, then SERVE...
