[SimplifyMe] SlowCooker Cornbread {Stew}

 

SLOWCOOKER CORNBREAD STEW
Makes 6 servings.

1 tsp each chili powder, dried oregano, cumin and salt
1 green bell pepper, cored, seeded, thinly sliced
4 cloves garlic, sliced
2 cups chicken broth
1 1/4 pounds sweet potatoes, peeled, cut into pieces
1 onion, chopped
2 pounds boneless pork ribs, cut into pieces
CORNBREAD---
1/2 cup each cornmeal, milk and flour
2 tbs each butter, cut into small pieces and chopped parsley
1/8 tsp salt
2 tsp sugar
1 tsp baking powder

COAT slow cooker bowl with cooking spray. Season pork with chili powder, oregano, cumin and 1/2 tsp salt. Place in slow cooker, add onion, garlic, potatoes and pepper. Pour broth over top. Cover cook on high 6 hours or low 8 hours. Add remaining salt 45 min. before end of cooking time, drop cornbread batter in heaping tbs on top, then SERVE...CORNBREAD---In a bowl, whisk together cornmeal, flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse meal. Stir in milk until moistened, fold in parsley.
