[SimplifyMe] Peppermint Chocolate {Bark}

 

PEPPERMINT CHOCOLATE BARK
Makes 2 pounds.

3 candy canes, crushed
1 1/2 tsp peppermint extract
1 pound white chocolate, chopped into pieces
12 oz semisweet chocolate, chopped into pieces

LINE a baking sheet with foil. Heat 1" water in a saucepan until steaming. Put all but 3/4 cup of semisweet chocolate in a bowl. Set bowl over saucepan of steaming water, stir until one third of the chocolate is melted. Remove bowl from saucepan, stir reserved semisweet chocolate into bowl until all of the chocolate is melted. Return bowl to saucepan to melt chocolate. STIR 3/4 tsp peppermint extract into chocolate, then pour into baking dish. Set aside at room temp until almost set. Put all but 1 cup of the white chocolate in a bowl, repeat melting process over steaming water. Stir in remaining peppermint extract, pour over semisweet chocolate. Sprinkle with crushed candy canes, pressing them into white chocolate. Set aside at room temp until firm. Lift bark out of pan using foil, break it into pieces, then SERVE...
