[SimplifyMe] Cheesy Lentil {Sloppy Joes}

 

CHEESY LENTIL SLOPPY JOES
Makes 6 servings.

Sliced pickles
6 hamburger buns, toasted
8 oz ground beef
1/4 tsp dried oregano
1 clove garlic, finely chopped
1/2 bell pepper, finely chopped
1 onion, finely chopped
6 slices cheddar cheese
1 tbs Worcestershire sauce
Salt and Black pepper
1/2 cup dried brown lentils, rinsed
1/2 cup ketchup
1 carrot, finely chopped
2 tbs vegetable oil

HEAT 1 tbs oil in a saucepan. Add onion, carrot, bell pepper and 2 tbs ketchup, cook until vegetables are slightly soft. Add garlic, cook 30 seconds. Add lentils, oregano and 4 cups water, bring to a boil, cook 5 min. then reduce heat, simmer until lentils are tender and water is absorbed. Season with salt and pepper.
HEAT remaining oil in a skillet. Add beef, cook breaking it up until it begins to brown. Add Worcestershire and remaining ketchup, cook until combined. Add lentil mixture and 1 cup water, cook until lentils are soft and mixture thickens. Season with salt and pepper. Fill buns with cheese and lentil mixture. Top with pickles, then SERVE...
