PASTA WITH BACON Makes 6 servings.
Grated Parmesan cheese
1/4 tsp crushed red pepper flakes
8 oz pkg sliced mushrooms
10 slices bacon
12 oz pkg baby spinach
2 cloves garlic, sliced
1 medium onion, halved and sliced thin
16 oz box penne pasta
Cook pasta as package directs. Cook bacon in a skillet until browned. Remove bacon to paper towels to drain. Remove all but 2 tbs fat from skillet. Add onion and mushrooms to skillet, saute 5 min. or until onion is golden. Add garlic and pepper flakes, cook 30 seconds or until fragrant.
---Add spinach cover and cook 2 min. or until wilted. Drain pasta, reserving 1 cup pasta water. Add pasta to skillet with some of the reserved pasta water, toss. Crumble bacon on top of pasta and SERVE with cheese...
