PASTA WITH PINK SAUCE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
8 oz pkg penne pasta
2 red and/or yellow bell peppers, sliced
2 cloves garlic, minced
1 onion, minced
1/2 cup marinara sauce
1/4 cup broth
1 tbs minced oregano
12 oz can evaporated milk
4 tbs grated Parmesan cheese
Pinch of cayenne pepper
Prepare pasta according to package directions, reserving 1 cup pasta water. In skillet coated with cooking spray, cook peppers, garlic, and onions until tender. Add next 4 ingredients. Let simmer 5 min. Add Parmesan, cayenne, and pasta, toss, adding pasta water as needed. Season. Garnish with basil. SERVE & ENJOY...
