PASTA WITH GARLIC ALFREDO
MAKES 6 SERVINGS.
8 oz pkg linguine pasta
4 cups cauliflower florets
1 onion, minced
2 cloves garlic, minced
1/4 cup sun dried tomatoes, minced
2 tbs oil
1/2 cup chive and onion cream cheese
1 1/2 cups milk
1/2 cup grated Asiago cheese
Prepare pasta according to package directions, reserving 1 cup pasta water. In skillet, cook next 5 ingredients and 1/4 cup pasta water until veggies are tender and water evaporates. Uncover, cook until cauliflower is brown. Remove from skillet. Add cream cheese and milk to skillet, bring to a simmer. Stir in Asiago, remove from heat. Add veggies and linguine, toss. SERVE & ENJOY...
