[SimplifyMe] Apple Walnut {Bread}

 

APPLE WALNUT  BREAD
MAKES  8 SLICES.

Heat oven to 350 degrees. Line a loaf pan with parchment, leaving an overhang, coat with cooking spray. MAKE BATTER---Whisk 3 shredded peeled apples, squeezed dry, 1/2 cup each oil and plain  yogurt, 2 eggs, and 1 tsp vanilla. Separately, whisk 1 1/2 cups flour, 3/4 cup sugar, 1/2 cup chopped walnuts, 1/2 cup dried cranberries, 1/2 tsp ginger, 1 tsp each baking powder and cinnamon, 1/2 tsp salt and 1/4 tsp each baking soda and nutmeg. Fold wet ingredients into dry ingredients. Bake 70 min. or until done. Let cool 1 hour, then remove loaf from pan. SERVE & ENJOY...
