APPLE MERINGUE PIE
MAKES 8 SERVINGS.
1 round pie dough
1/4 cup sliced blanched almonds
6 apples, peeled, chopped
11 tbs sugar
4 tbs unsalted butter
2 tbs lemon juice
2 tsp vanilla
3 egg whites
Pinch of salt
Heat oven to 425 degrees. Line a pie plate with dough, crimp edges. Pierce bottom all over, then refrigerate 15 min. Place on a baking sheet, bake until golden 13 min. Cool crust. Spread almonds on a baking sheet, bake until golden 8 min. Combine apples, 5 tbs sugar, butter, juice, and vanilla in pan, cook until apples are tender. UNCOVER, cook mashing until saucy and starting to caramelize. Let cool 15 min.Transfer apples to crust, sprinkle with almonds. Beat egg whites and salt until foamy. Add remaining sugar, beat until stiff. Transfer meringue to a pastry bag fitted with a star tip. Pipe around edge of pie, then pipe in a lattice pattern. Bake until meringue is golden 20 min.
