APPLE BREAD PUDDING
MAKES 8 SERVINGS.
1 pound loaf sliced cinnamon raisin bread, cut into pieces
2 tbs unsalted butter
4 cups milk
1/2 cup sugar
1/2 tsp salt
2 eggs plus 6 egg yolks
1 tsp vanilla
2 apples, peeled, diced
1/2 cup bittersweet chocolate chips
Powdered sugar
Whipped cream
Heat oven to 250 degrees. Spread bread on a baking sheet, bake until crisp 30 min. let cool. Butter a 9x13" baking dish, set aside. Combine milk, sugar, and salt in a pan to dissolve sugar, remove from heat, let cool slightly. Whisk eggs, egg yolks, and vanilla in a bowl. Pour warm milk mixture into eggs.*Toss bread with apples and chocolate chips in a bowl, then spread in baking dish. Pour custard over bread mixture. Dot with butter. Cover with foil, set aside 30 min. Increase oven to 350 degrees. Bake bread pudding until done 45 min. Uncover, continue baking until browned 15 min. Let cool slightly, dust with powdered sugar. SERVE with whipped cream & ENJOY...
