SWEET SPICY SQUASH---with glazed pecans and thyme.
MAKES 6 SERVINGS.
2 pounds butternut squash, peeled, sliced
2 tbs olive oil
1 tbs chopped thyme
1/4 tsp cayenne pepper
1/4 cup chopped pecans
1 tbs maple syrup
2 tsp butter
Heat oven to 425 degrees. On baking sheet, toss squash with oil, thyme and cayenne pepper. Season with salt and pepper. Arrange squash on baking sheet. Roast squash 18 min. or until tender and light golden brown. *In skillet, combine pecans, maple syrup and butter. Cook until pecans are toasted and glazed. Season with salt and pepper. Arrange squash on platter. Sprinkle with pecans. SERVE & ENJOY...
