SAUCY MEATBALL SANDWICHES
MAKES 4 SERVINGS.
4 hoagie rolls, split
3 tbs milk
1/2 tsp dried oregano
1/4 tsp salt
12 oz ground turkey breast
1 egg white
4 tsp oil
3/4 cup chopped onion
1 tsp minced garlic
1/4 cup white wine or broth
1 3/4 cups marinara sauce
1/4 cup chopped basil
1 tbs balsamic vinegar
5 tsp grated Parmesan cheese
Heat broiler. Hollow out top and bottom halves of bread. Place torn bread in a bowl. Add milk, stir until smooth. Add oregano, salt, turkey and egg white to bread mixture, stir until combined. Shape turkey mixture into 12 meatballs. *Heat a skillet. Add 1 tbs oil to pan. Add meatballs, cook to brown. Remove meatballs from pan. Add remaining oil to pan. Add onion and garlic to pan, saute until tender. Add wine, cook 1 min. *Stir in marinara, basil, and vinegar, bring to a boil. Return meatballs to pan. Simmer until meatballs are done. Arrange rolls on a baking sheet, broil until toasted. Top bottom half of each roll with 3 meatballs, 1/3 cup sauce and top half of roll. Sprinkle with Parmesan. SERVE & ENJOY...
