NUTTY BALSAMIC CHICKEN
MAKES 12 SERVINGS.
4 tsp oil
12 skinless boneless chicken thighs
Salt & Pepper
2 onions, quartered
1/3 cup balsamic vinegar
1/4 cup chicken stock
1 tbs soy sauce
1 1/2 tsp brown sugar
3 thyme sprigs
1/3 cup halved pitted olives
3 tbs chopped walnuts, toasted
1 tbs chopped chives
2 tsp chopped thyme
Heat a pot. Add 2 tsp oil to pan. Sprinkle chicken with salt and pepper. Add chicken thighs to pan, cook until browned. Turn chicken over, cook 1 min. Remove chicken from pan. Repeat. *Add remaining oil to pan. Add onion to pan, cook until browned. Remove onion from pan. Add vinegar to pan, cook 10 seconds. Add stock, soy sauce, sugar, and thyme, cook 30 seconds. Return chicken and onion to pan, toss, cook until chicken is done. Discard thyme. Sprinkle with olives and remaining ingredients. SERVE & ENJOY...
