BERRY CARAMEL SUNDAES
MAKES 2 SERVINGS.
1 cup frozen raspberries, thawed
3 tbs heavy cream
1/2 cup sugar
1/2 pint chocolate ice cream
Whipped cream
Raspberries
Chocolate sprinkles
Press and scrape thawed berries through a fine mesh sieve, discard solids. Stir cream into strained liquid. In a pan, stir sugar and 1/8 cup water until sugar dissolves. *COOK until amber colored. Remove from heat. Stir in 1 tbs berry cream, then stir in rest. Chill. Layer sauce and ice cream in glasses. Top with whipped cream, berries and sprinkles. SERVE & ENJOY...
