CRISPY CARROT FRITTERS
MAKES 4 SERVINGS.
4 cups water
2 cups broccoli florets
1 cup matchstick cut carrots
1/2 cup flour
1/3 cup grated Parmesan cheese
1/2 tsp salt
1/8 tsp ground red pepper
2 green onions, sliced
1 egg
2 tbs oil
1 cup plain yogurt
2 tsp chopped dill
Place water, broccoli and carrots in a pan, bring to a boil. Cook 4 min. drain. Pat broccoli mixture dry with paper towels, chop. Place broccoli mixture and flour in a bowl, stir to coat. Add cheese, salt, pepper, onions, and egg to broccoli mixture, stir to combine. HEAT a skillet. Add oil to pan. Spoon 1/4 cup broccoli mixture into a measuring cup. Pour mixture into pan, flatten slightly. Repeat to form 8 fritters. Cook until golden brown. Combine yogurt and dill in a bowl. SERVE yogurt mixture with fritters & ENJOY...
