BLACK OLIVE SALAD Makes 8 servings.
Pepper
6 large oranges
2 sprigs thyme
2 garlic cloves, lightly smashed
1/4 tsp salt
1 cup pitted black olives
2 strips orange rind, sliced into julienned strips
1/4 cup olive oil
Combine garlic, oil, thyme and orange rind in a bowl. Add olives, toss to combine, set aside, covered overnight. Cut peel and pith from oranges and slice into 1/4" rounds. Arrange slices on a platter. Spoon olives and dressing over top. Sprinkle with salt and pepper, then SERVE...
