[SimplifyMe] Matzo Pizza (Lasagna)---with Cheese

 

MATZO PIZZA LASAGNA                                            Makes 6 servings.

1 tsp dried oregano
1 1/2 cups shredded mozzarella cheese
5 square sheets matzo
8 oz Italian sausage, casings removed
1 onion, finely chopped
4 tbs olive oil
1/2 cup thinly sliced pepperoni
15 oz container ricotta cheese
4 cups marinara sauce
1 small green bell pepper, thinly sliced
10 oz cremini mushrooms, sliced

In a skillet, heat 2 tbs oil. Add mushrooms and cook until nicely browned. Add onion, lower heat and cook until golden and tender, transfer to a plate. In same pan, heat remaining oil. Add bell pepper and cook 2 min. Add sausage, crumbling and cook until browned. Remove from heat.
-Heat oven to 400°. Grease an 8" square glass baking dish and add 1 cup marinara to the bottom. Top with 1 matzo. Break off a piece from from another matzo to cover the bottom. Layer on 1/2 cup marinara, mushroom mixture, half the ricotta, 1/2 cup marinara and 1/2 cup mozzarella.
-Add another layer of matzo, 1 cup marinara, sausage mixture, remaining ricotta, 1/2 cup marinara and a final layer of matzo. Top with remaining marinara and mozzarella, then with pepperoni and oregano. Cover with foil, set on a baking sheet and bake 30 min. Uncover pan and bake until golden and bubbling, 15 min. Let cool 20 min. before cutting, then SERVE...
