[SimplifyMe] Braised Pork (Chops)---with Peppers

 

BRAISED PORK CHOPS                                  Makes 4 servings.

1/2 cup chicken or vegetable broth or dry red wine
1 small onion, halved and cut into slices
1 tbs tomato paste
2 tsp olive oil
4 cloves garlic, thinly sliced
2 small yellow or red bell peppers, quartered and cut into slices
Salt and Pepper
4 boneless pork chops

Warm oil in a skillet. Season pork chops with salt and pepper, cook until browned. Remove pork chops and set aside. Add tomato paste to skillet and cook 15 seconds. Add bell peppers and onion to skillet, season with salt and pepper. Cook until vegetables start to brown. Add garlic and cook 1 min.
-Add broth and bring to a boil, stirring. Return pork chops to skillet, nestle them in liquid and reduce to a simmer. Cover and cook 4 min. Turn pork chops, cover and cook until done. SERVE with pepper and onion mixture on top of pork chops...
