PEPPERONI HASH
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
Simmer 1 1/4 pounds diced potatoes in salted water until tender. Drain. Heat 3 tbs oil in a skillet. Add potatoes, cook until crisp. Add 3 oz diced pepperoni and 1 minced garlic clove, cook 1 min. Stir in 3 chopped green onions, season. SERVE & ENJOY...
