[SimplifyMe] Cuban Pork {Salad}

 

CUBAN PORK SALAD
MAKES 2 SERVINGS.

2 pork chops
1/3 cup lime juice
2 cloves garlic, minced
1/2 tsp cumin
2 slices cored pineapple
2 1/2 oz baby greens
Half of a 14.5 oz can black beans, drained
1/4 onion, cut into slivers
1 1/2 tbs oil
1/2 tsp honey

In a bowl, whisk lime juice, garlic, cumin, salt and pepper. Reserve 1/4 cup for dressing, refrigerate. Transfer remaining mixture to a plastic bag. Add chops, seal bag, refrigerate 2 hours. Prepare grill, oil grill grate. *Remove chops from marinade, discard marinade. Grill chops and pineapple until done. Remove, let pork rest 3 min. Place greens on plates, then add pineapple, beans, and onion. Top with pork chops. Whisk oil and honey into dressing mixture, drizzle on salads. SERVE & ENJOY...
