[SimplifyMe] Glazed Veggie {Noodles}

 

GLAZED VEGGIE NOODLES
MAKES 2 SERVINGS.

1 eggplant, sliced
4 oz green beans, trimmed, cut into pieces
1 tsp plus 1 1/2 tbs toasted sesame oil
4 oz soba noodles, thin buckwheat noodles
1 1/2 tbs miso paste, soybean paste
1 tbs brown sugar
1 tbs red wine vinegar
1/2 tbs soy sauce
1 clove garlic, crushed
1 tsp grated peeled ginger
3 oz baby spinach
Sliced green onions and sesame seeds

Prepare grill. Sprinkle eggplant with salt. Arrange between layers of paper towels, let stand 15 min. *Stack 2 sheets of foil. Place beans on half of foil, toss with 1 tsp oil. Fold other half of foil over, crimp edges to seal. Grill 16 min. set aside. *Cook noodles as label directs, drain, set aside. In a bowl, whisk miso, sugar, vinegar, soy sauce, garlic, ginger, remaining oil, and 1 tbs water. Press liquid from eggplant. Brush eggplant with some miso mixture. Grill eggplant until tender. Cut into pieces. *Toss noodles, beans, and eggplant with miso in bowl. SERVE on spinach, top with onions and seeds & ENJOY...
