CHINESE SLIDERS WITH SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 tbs hoisin
2 tbs plus 1 tsp rice vinegar
12 oz ground pork
2 tbs breadcrumbs
1 green onion, sliced
1 tsp grated peeled ginger
1/4 head cabbage, chopped
2 carrots, chopped
1/2 cup chopped pineapple
1 tbs mayonnaise
12 slider buns, split
Shredded lettuce
Heat oven to 425 degrees. Coat a baking sheet with cooking spray. Combine 1 tbs hoisin and 1 tsp vinegar in a bowl, set aside. Combine pork, breadcrumbs, remaining hoisin, green onion, ginger, salt and pepper in a bowl, roll mixture into 12 meatballs, transfer to baking sheet. BAKE until browned and cooked through 6 min. per side. Remove from oven, brush with reserved hoisin mixture. Combine cabbage, carrots, and pineapple in a processor. Add remaining vinegar, mayo, and salt, pulse until chopped. Spread mayo on bottom half of each bun, then fill with lettuce and a meatball. SERVE with pineapple salad & ENJOY...
