[SimplifyMe] Tomato {Tartines} on Bread

 

TOMATO TARTINES ON BREAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

10 tomatoes
8 sprigs thyme
6 tbs oil
1/4 cup pitted olives
1 anchovy fillet
1 clove garlic
1 tbs capers
1 tbs red wine vinegar
2 oz ham, sliced
1 bread baguette
12 oz ball mozzarella cheese, sliced
Shredded lettuce

MAKE TOMATO SAUCE---Heat oven to 375 degrees. Line a baking sheet. Halve 4 tomatoes, sprinkle with salt and pepper. Place tomatoes on baking sheet, tucking 1 thyme sprig under each. Drizzle with 2 tbs oil, roast until skins start to loosen 15 min. Remove from oven, set aside until cool, pinch off skins, discard. Return tomatoes to oven, continue roasting until slightly dried 1 hour. Discard thyme, set tomatoes aside to cool. PUREE tomatoes, olives, anchovy, garlic, capers, vinegar, 3 tbs oil, and 2 tbs water in a processor until smooth. HEAT a skillet, add remaining oil, add ham slices, cook until golden and crisp. Drain. CUT baguette in half crosswise, then split each half open to make 4 pieces. Place on a baking sheet, bake until golden 5 min. Slice remaining tomatoes. Spread tomato sauce on baguette. Arrange cheese and tomatoes on top. Season, top with ham and some lettuce. SERVE & ENJOY...
