[SimplifyMe] Cajun {Fish} with Kale

 

CAJUN FISH WITH KALE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

2 tbs olive oil
2 stalks celery, chopped
6 green onions, sliced
2 cloves garlic, chopped
2 1/2 tsp Cajun seasoning
2 1/2 tsp brown sugar or Splenda
Two 15 oz cans kidney beans, drained
15 oz can no salt added diced tomatoes
8 cups frozen kale
Hot sauce
4 fish fillets
Lemon wedges

Heat 1 tbs oil in a pan. Add celery and green onions, cook until soft. Add garlic and 1 tsp each Cajun seasoning and brown sugar, cook 30 seconds. Add beans, tomatoes, and 3/4 cup water, bring to a simmer, cook until liquid is slightly reduced. Stir in kale, cook until tender. Add a few dashes hot sauce. *Mix remaining Cajun seasoning and brown sugar, sprinkle on each fish fillet. Heat oil in a skillet. Add fish, cook until blackened on bottom, turn fillets, cook until opaque. Transfer to plates. SERVE with kale and lemon wedges & ENJOY...
