TOMATO JAM WITH LAMB-CHOPS
MAKES 4 SERVINGS.
1 cup chopped mint
1/2 cup breadcrumbs
1/4 cup olive oil
2 cloves garlic, 1 minced, 1 whole
2 tsp chopped rosemary
1/4 tsp red pepper flakes
8 lamb chops
1 pound cherry tomatoes, halved
1 tbs lemon juice
3/4 tsp sugar or Splenda
Combine 3/4 cup mint, breadcrumbs, and 2 tbs oil in a bowl. Add minced garlic, 1 tsp rosemary, pepper flakes, and salt, mix until combined. Season lamb, then press crumb mixture on chops. Put chops on a plate, refrigerate 2 hours. Heat oven to 450 degrees. Remove lamb chops from refrigerator. *MAKE TOMATO JAM---Toss tomatoes, whole garlic clove, 1 tbs oil and remaining rosemary on a baking sheet. Transfer to oven, roast until tomatoes are slightly charred 20 min. let cool slightly, then transfer to a bowl. Add lemon juice and sugar, mash until somewhat smooth. Stir in remaining mint, season. *Heat a skillet. Add remaining oil, sear lamb chops until browned, turn chops, sear until brown. Transfer to a baking sheet, roast in oven 10 min. Let rest 5 min. SERVE with tomato jam & ENJOY...
