LOW-CALORIE TOFU RICE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
3 tbs oil
1/2 onion, chopped
2 stalks celery, chopped
2 cloves garlic, minced
1 1/4 cups rice
1 tsp Cajun seasoning
14 oz pkg extra firm tofu
2 bell peppers, sliced
1/4 cup barbecue sauce
2 green onions, chopped
3 tbs chopped parsley
Heat 1 tbs oil in a pan. Add onion and celery, cook until softened. Add garlic, cook 1 min. Add rice and Cajun seasoning, cook until lightly toasted. Stir in 2 cups water and salt. Bring to a simmer, cook until tender, set aside. *Wrap tofu in paper towels, set on a plate, let drain 10 min. Cut in half lengthwise, then slice 1/2" thick. Heat a skillet. Add 1 tbs oil, bell peppers, salt and pepper. Cook until peppers start browning, transfer to a plate. *Add remaining oil and tofu to skillet, cook until browned. Stir in bell peppers, barbecue sauce, and green onions. Stir parsley into rice, top with tofu. SERVE & ENJOY...
