CHICKEN WITH FRUIT
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/3 cup hoisin sauce
2 tbs red wine vinegar
2 tbs oil
1 tsp grated peeled ginger
8 skin on bone in chicken thighs
4 plums, halved, pitted
6 cups lettuce, torn
Juice of 1/2 lemon
2 tbs chopped roasted salted cashews
Heat a grill. Combine hoisin, vinegar, 1 tbs oil, ginger, salt and pepper in a bowl. Remove 3 tbs mixture to a separate bowl, add chicken, toss. Add plums to remaining hoisin mixture, toss. *Brush grill grates with oil. Add chicken, grill until marked and cooked through, transfer to a plate. Place plums on grill, cook until softened. Transfer to plate with chicken. Toss lettuce with remaining oil, lemon juice, and cashews, season. SERVE with grilled chicken and plums & ENJOY...
