[SimplifyMe] Herb Seafood {Sandwiches}

 

HERB SEAFOOD SANDWICHES
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 pound sea scallops, foot muscles removed
2 tbs oil
6 sprigs thyme, leaves stripped
1 tbs chopped parsley
3 tbs unsalted butter
4 hot dog buns
8 leaves lettuce
Juice of 1/2 lemon, plus wedges
1 tbs chopped tarragon
1 tbs chopped chives

Cut scallops in half, transfer to a bowl, season. Add oil, thyme and parsley, toss, refrigerate. Butter insides of rolls. Heat a skillet. Add rolls, toast until golden. Remove to a plate, cool, tuck 2 lettuce leaves into each.  *Heat skillet. Add scallops, cook until golden. Flip scallops, add remaining butter to pan. Spoon butter over scallops until they are cooked through and butter begins to brown. Add lemon juice, toss. Divide scallops among rolls, drizzle with browned butter. Sprinkle with herbs. SERVE with lemon wedges & ENJOY...
