CHEESY-PASTA STUFFED ZUCCHINI
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 zucchini, halved lengthwise
2 tbs oil
1/2 cup pasta
1 onion, chopped
1/2 cup heavy cream
1/2 cup chicken broth
3/4 cup shredded Swiss cheese
3 tbs grated Parmesan cheese
1 egg yolk
1 tsp grated lemon zest
1 tbs breadcrumbs
Heat broiler. Line a baking sheet. Scoop out seeds from zucchini. Brush zucchini with 1 tbs oil, season. Transfer to baking sheet, broil until soft, set aside. *Bring a pan of salted water to a boil. Add pasta, cook as label directs, drain. Heat remaining oil in a skillet. Add onion, cook until tender. Add cream and broth, bring to a simmer, cook until slightly thickened. *Add Swiss cheese, 2 tbs Parmesan, salt and pepper to pan, stir until cheese melts. Remove from heat, stir in yolk, pasta, and zest. *Combine breadcrumbs and remaining Parmesan in a bowl. Fill zucchini halves with pasta mixture, sprinkle with Parmesan breadcrumbs. Return to broiler until golden. SERVE & ENJOY...
