TEX-MEX STUFFED ZUCCHINI
MAKES 4 SERVINGS.
3 zucchini
2 tbs oil
1 clove garlic, minced
1 jalapeno pepper, minced
1/2 tsp chili powder
1 cup grated muenster cheese
1 tomato, chopped
3 tbs chopped green onions
Heat oven to 450 degrees. Line a baking sheet. Halve 2 zucchini lengthwise, scoop of seeds. Chop scoop out zucchini flesh, transfer to a bowl. Grate remaining whole zucchini, add to bowl along with salt. Set aside 10 min. squeeze out liquid. *Heat oil in a skillet. Add garlic, jalapeno, chili powder, and zucchini mixture, cook until tender. Cool. Stir in cheese. Spoon into zucchini halves. Transfer to baking sheet, bake until bubbling 20 min. *Combine tomato and green onions in a bowl. Spoon over zucchini. SERVE & ENJOY...
