CHEESE AND MELON
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 tsp minced shallot
1 tsp minced garlic
1/4 cup red wine vinegar
1 tbs honey
1/2 cup plus 1 tbs oil
2 tbs sliced toasted nuts
2 tbs chopped mint
8 small wedges seedless watermelon, rind removed
8 oz cheese, cut into 8 slices
Place shallot and garlic in a bowl, add a pinch of salt. Add vinegar and honey, whisk. Whisk in 1/2 cup oil, add nuts and mint. Place melon in a dish. Pour dressing on top, marinate 1 hour in refrigerator. Heat a skillet, add remaining oil. Sear cheese 1 min. per side, remove from pan, top each with a piece of marinated watermelon. SERVE & ENJOY...
