CHERRY PUDDING TART
MAKES 8 SERVINGS.
1 1/4 cups self rising flour
1 cup vanilla Greek yogurt
1/4 cup sugar
3.56 oz pkg instant vanilla pudding mix
1 1/4 cups milk
1/2 cup cran-cherry juice
2 tbs cornstarch
1/2 cup cherry preserves
1 pound pitted cherries
2 tbs toasted sliced almonds
Heat oven to 400 degrees. In bowl, stir together first 3 ingredients, kneading until dough comes together. Shape into disk, press into bottom and up sides of greased 9" tart pan. Bake 15 min. or until done, cool. *In bowl, whisk pudding mix and milk until thickened, spread in crust. In pot, whisk juice and cornstarch until smooth, add preserves. Bring to a boil, cook 1 min. Add cherries, cook 2 min. Cool, spread over pudding. Sprinkle with almonds. SERVE & ENJOY...
