YUMMY VEGGIE SALAD
MAKES 6 SERVINGS.
4 tbs citrus dressing
1 lime, zested, juiced
1 clove garlic, minced
Pinch cayenne pepper
3 ears corn
15.5 oz can black beans, drained
2 avocados, diced
1 bell pepper, diced
1/2 cup minced onions
1/2 cup minced cilantro
1 head lettuce
Heat grill. In bowl, combine dressing, 1 tbs lime juice and 1 tsp lime zest, garlic, and cayenne. Coat corn with cooking spray, season with salt and pepper. Grill until lightly charred. Cut corn off cobs. *Toss corn, beans, avocados, peppers, onions and cilantro with dressing. Season with salt and pepper. SERVE on lettuce lined platter & ENJOY...
