ROASTED VEGGIE LEMON-CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 tbs oil
1 lemon, sliced
4 garlic cloves, minced
1/4 tsp grated lemon peel
Salt and Pepper
8 boneless skinless chicken thighs
1/4 tsp rosemary, crushed
1 pound potatoes, halved lengthwise
8 cherry tomatoes
Grease a skillet with 1 tsp oil. Arrange lemon slices in skillet. Combine 1 tsp oil, 2 garlic cloves, lemon peel, salt and pepper, rub over chicken. Place over lemon slices. *In a bowl, combine rosemary and remaining oil, garlic, salt and pepper. Add potatoes and tomatoes, toss. Arrange over chicken. Bake at 450 degrees for 30 min. or until chicken is no longer pink and potatoes are tender. SERVE & ENJOY...
