STEAK WITH CORN-SALAD
MAKES 2 SERVINGS.
3/4 pound steak, cut into pieces
Salt and Pepper
1 ear corn
1 tbs lime juice plus lime wedges
1 tbs oil
1/2 onion, chopped
1 avocado, diced
1/2 cup cilantro leaves
4 flour tortillas
Heat grill. Season steak with salt and pepper, grill to desired doneness. Transfer to a cutting board, let rest 5 min. before slicing. Place corn on grill along with steak, grill until charred. Transfer corn to a cutting board, remove kernels from cobs. *In a bowl, whisk together lime juice, oil, salt and pepper. Add corn and onion, toss, then fold in avocado and cilantro. Warm tortillas on grill. SERVE with steak, corn salad and lime wedges & ENJOY...
