[SimplifyMe] Pork and {Beans}

 

PORK AND BEANS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 onion, sliced
Juice of 3 limes
1 tsp chopped chipotle chile plus 2 tsp adobo sauce
2 tsp cumin
Salt
1 1/2 pounds pork tenderloin
2 tbs oil
3 bell peppers, cut into strips
15. 5 oz can black beans, drained
1 tsp honey
1/2 cup chopped cilantro

Heat oven to 425 degrees. Combine half of the onion with juice of 2 limes, chipotle, 1/2 tsp cumin and a pinch of salt in a bowl, set aside.  *Sprinkle pork with remaining cumin, season with salt. Heat a skillet. Add 1 tbs oil, then add pork, brown on all sides. Remove to a baking sheet, roast until done 15 min. Transfer to a cutting board.  *Add bell peppers and remaining oil to skillet. Cook until slightly softened. Add 1/2 cup water and salt. Cook until water evaporates. Remove from heat, add onion mixture.  *Toss beans with remaining onion, juice of remaining lime, adobo sauce, honey, cilantro and a pinch of salt. Slice pork, SERVE with beans and pepper & ENJOY...
