BACON WITH DUMPLINGS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
3 tbs oil
2 slices bacon, cut into pieces
1 onion, chopped
1 head escarole, chopped
Salt and Pepper
17.5 oz pkg potato gnocchi, dumplings
1 1/2 cups cherry tomatoes, halved
1/2 cup grated Parmesan cheese
2 tbs chopped parsley
Heat oil in a pot. Add bacon, cook until browned and crisp. Add onion, continue cooking until softened. Stir in escarole, salt and pepper. Cook until escarole is wilted. *Bring a pot of salted water to a boil. Add gnocchi, cook as label directs. Reserve 1/2 cup cooking water, then drain gnocchi, add to pot with escarole mixture. Add cooking water, stir. Stir in tomatoes, Parmesan and parsley, season with salt and pepper. SERVE & ENJOY...
