[SimplifyMe] Meringue Lemon {Cupcakes} TNT

 

MERINGUE LEMON CUPCAKES---Yummy and easy.
MAKES 12 CUPCAKES.

FOR CUPCAKES---
1 3/4 cups flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 eggs
1 3/4 cups sugar
1 cup milk
3/4 cup oil
Zest of 2 lemons
2 tbs lemon juice
1 tsp vanilla
FOR MERINGUE---
2 egg whites
1/4 tsp salt
1/2 cup sugar
1/2 cup corn syrup
1/4 tsp vanilla
FOR GLAZE---
2 1/2 cups powdered sugar
1/4 cup lemon juice
7 drops yellow food coloring, I used 5 drops yellow and 2 drops green

MAKE CUPCAKES---Heat oven to 350 degrees. Line a 12 cup muffin pan with paper liners. Whisk flour, baking powder, baking soda and salt in a bowl until combined. Whisk egg, sugar, milk, oil, zest, juice and vanilla in a bowl until combined. Whisk flour mixture into egg mixture. Divide batter among muffin cups. Bake until done 30 min. Let cool 15 min. in pan. MAKE MERINGUE---Beat egg whites and salt in a bowl until foamy. Beat in 2 tbs sugar, beat until stiff peaks form. Combine remaining sugar, corn syrup and 1/4 cup water in a pan. Cook until mixture registers 245 degrees. Remove from heat. Pour hot sugar syrup into egg whites, beat until meringue is fluffy. Beat in vanilla. Transfer meringue to a pastry bag, pipe onto cupcakes, set aside 15 min. MAKE GLAZE---Whisk powdered sugar, juice and food coloring in a bowl until smooth. Microwave 1 min. then whisk until sugar dissolves, let cool 5 min. Dip meringue covered tops of cupcakes into glaze. SERVE & ENJOY...
